One Squash Meal

Comments: I love squash, of any type, but especiallt spaghetti squash. It can be ready in minutes in the microwave, and it is so filling, yet so calorie-wise. The following recipe has been adapted from a Kraft recipe that used only the cheese, tomatoes and parsley as a filling. I found it a little bland for my taste, so I spiced it up a little and added some meat to make it a "one squash meal." Hope you enjoy!

Ingredients:
1 large spaghetti squash (3 lb.)
1/2 pound lean hamburger , scramble fried and well-drained OR 1/4 cup diced cooked ham
1/4 cup light grated Parmesan cheese
1/2 cup part-skim Mozarella shredded cheese
1 cup finely diced tomatoes, drained (about 2 medium)
1/2 teaspoon garlic powder
salt and pepper to taste
1/4 cup chopped fresh parsley

Instructions:
Using a fork or straight knife, poke 2 small gashes in the squash to allow steam to escape, before putting it whole into the microwave. Cook on high for 5 minutes. Turn over and microwave another 5 minutes on high. Let it sit for ANOTHER 5 minutes.
Cut the squash in half lengthwise, and holding one half with a paper towel or cloth, carefully remove and discard all seeds and dark orange pulp. Using a fork, scrape the insides of the squash to make strings. Pile this into a bowl. Only scape down into what can be shredded. The solid remains will be used as a container for the meal when assembled, so save it.
Do the other half the same.
Into the bowl of shredded pulp add the garlic, salt and pepper, tomatoes, cheese, parsley and meat (if using). Toss well. Spoon this mixture into the 2 empty squash half-shells. Cook in the microwave on high for another 3 minutes or until heated through. Enjoy!
